Water has been considered invaluable since the times of Ancient Rome, when a complex and unique water supply system was built in the city, with 11 main aqueducts that are still partially functional today. The water was chosen based on several factors: its purity, its taste, its temperature, and the location of its springs. When a source was new, water samples were poured into high-quality bronze vessels and analysed for effervescence, viscosity, corrosion effects and foreign bodies.
